Restaurant Manager - Condesa
VIDA PLENA
Remoto
The Role
At Condesa, it's tacos done right — real Mexican street food, grilled in the open, built around flavour and craft, not a theme. Already open and finding its rhythm, we run fast, casual, and doors-open-to-the-street, five nights a week. As our Restaurant Manager, you own the floor — reading the room, driving the pace, and building a team that makes Condesa a place people want to be, not just a place they eat.
Your Key Responsibilities
- Maintain high service standards, ensuring every guest has a positive experience, addressing feedback promptly, engaging naturally with guests, and building strong relationships that increase satisfaction and loyalty.
- Ensure the consistent execution of brand standards, operational policies, service rituals, and the attitude that reflects the venue’s vibrant spirit and guest experience.
- Lead with strong operational presence on key days, peak shifts, and events, staying close to guest flow, team performance, service pace, and real-time venue needs.
- Oversee both restaurant floor and bar operations, ensuring service, product quality, ambience, communication, and team coordination are aligned throughout the shift.
- Lead and inspire the team, achieve operational targets, manage budgets, and collaborate effectively with cross-functional teams and HQ.
- Manage budgets by tracking revenue and expenses, optimizing labor costs, implementing upselling strategies, and adjusting spending based on operational needs to enhance profitability.
- Manage team scheduling from planning to publication, ensuring shifts are properly organized, communicated, and aligned with forecasted business levels, key moments, and events.
- Control absences in the HRIS and review team clock-in and clock-out records before designated payroll dates, ensuring accuracy, fairness, and timely follow-up.
- Lead team management processes, including induction of new joiners, performance management and reviews, vacation planning and control, team organization, and active input on contract renewals.
- Recruit, train, and motivate staff to work effectively and cohesively by supporting candidate selection, implementing training programs, providing regular feedback, and fostering a positive, growth-oriented work environment.
- Monitor Google reviews and customer feedback to ensure the restaurant is always represented at the expected standard; react to negative reviews with care, report key issues to HQ and the Leadership Team, and implement agreed corrective actions.
- Ensure the restaurant complies with health, safety, and sanitation standards by monitoring HACCP protocols, enforcing hygiene practices, and conducting regular audits to uphold regulatory requirements.
- Ensure proper restaurant opening and closing procedures, including venue readiness, briefing standards, floor and bar setup, stock checks, equipment checks and shutdown, handovers, and end-of-day documentation.
- Secure money storage and deposits, accurate documentation of financial records, and responsible control of operational assets.
- Be prepared to handle unforeseen challenges, such as staffing shortages, supply chain disruptions, equipment issues, or customer complaints, by quickly assessing and addressing issues with effective solutions that minimize disruption.
- Collaborate closely with HQ to ensure best practices are implemented across the venue and that operational learnings are shared in a constructive, solution-focused way.
- Experience: At least 3 years in a similar role in hospitality, with proven leadership and management experience in high-quality, guest-focused operations.
- Proven experience managing both restaurant floor and bar service, with the ability to connect service standards, product quality, ambience, and team rhythm.
- Strong understanding of FOH and BOH coordination, logistics, HR processes, financial oversight, and daily operational controls.
- Confident using scheduling, HRIS, timekeeping, and payroll-related processes, with strong attention to detail and follow-through.
- Inspiring, supportive, and decisive leadership style, able to motivate, guide, and align a diverse team while creating accountability.
- Brand-minded and standards-driven, with natural alignment to energy, guest expectations, and service culture.
- Charismatic communicator who connects easily with staff, guests, partners, HQ, and the Leadership Team.
- Strategic thinker with strong planning, analytical, and problem-solving abilities.
- Deep understanding of HACCP, health and safety, sanitation, and operational standards.
- Fluent in English, with Portuguese or other local language skills as a plus.
- Reliable, guest-centric, and present, leading with confidence, care, and consistency.
- Available to work night shifts from 4:00 PM to 12:00 AM.
