Located in the heart of Lisbon’s vibrant Baixa district, along the city’s main pedestrian street, Rua Augusta, the hotel is spread across five distinct buildings, including the former headquarters of one of Portugal’s major banks, Banco Português de Investimento (BPI).
The central building houses 170 guestrooms, while the four surrounding satellite buildings offer a selection of exclusive private suites. We are looking for a talented and passionate Chef de Partie - Pastry to join our Culinary team at Andaz Lisbon. In this role, you will be responsible for leading the pastry section, ensuring the consistent delivery of high-quality desserts, pastries, baked goods, and confectionery creations that reflect the hotel's luxury standards and innovative culinary identity. Responsibilities:
- Prepare, produce, and present a wide range of pastries, desserts, cakes, breads, chocolates, and other sweet creations in accordance with established recipes and brand standards.
- Take ownership of the pastry section, ensuring smooth daily operations and maintaining the highest levels of quality and consistency.
- Collaborate with the Executive Chef and Pastry leadership team in developing innovative dessert concepts, seasonal menus, and signature pastry offerings.
- Ensure all products are prepared and presented to luxury hospitality standards, with exceptional attention to detail and aesthetics.
- Monitor stock levels, assist with inventory management, ordering, and cost control within the pastry section.
- Train, mentor, and support Commis Chefs and junior team members, fostering a positive and collaborative working environment.
- Maintain a clean, organized, and efficient workstation while adhering to all food safety, hygiene, and HACCP standards.
- Support the pastry operation for special events, banquets, private functions, and festive seasonal offerings.
- Contribute ideas for continuous improvement, innovation, and elevated guest experiences across all pastry outlets.
- Culinary qualification in Pastry Arts or equivalent professional experience.
- Previous experience as a Chef de Partie - Pastry or a similar role within a luxury hotel, fine dining restaurant, or high-volume premium operation.
- Strong technical pastry skills with expertise in modern dessert preparation, baking techniques, and presentation.
- Knowledge of food safety regulations, HACCP procedures, and kitchen best practices.
- Excellent organizational and time-management skills, with the ability to prioritize effectively in a fast-paced environment.
- A creative mindset combined with a strong focus on consistency and operational excellence.
