Mission: As a Sous Chef, you will support the Head Chef in leading the kitchen operation at ME Lisbon, ensuring culinary excellence, operational efficiency, and the consistent delivery of a high-end gastronomic experience aligned with the brand’s luxury lifestyle identity.

What will you have to do?

  • Support the Head Chef in overseeing the overall kitchen operation, ensuring consistency, efficiency, and excellence at all times.
  • Implement and uphold the F&B strategy, maintaining the highest standards of product quality, culinary direction, and presentation, with a strong emphasis on pan-Asian cuisine techniques, flavors, and presentation.
  • Lead, coordinate, and supervise kitchen teams, ensuring all preparations comply with established procedures and quality standards.
  • Actively contribute to pan-Asian menu development, daily specials, recipe standardization, and cost control, aligned with seasonality, product availability, and defined margins.
  • Ensure full compliance with food safety, hygiene, and cleanliness standards, including HACCP implementation and participation in internal and external audits.
  • Drive team recruitment, training, and professional development, fostering knowledge transfer in pan-Asian culinary methods, while promoting sustainability initiatives and food waste reduction.

What are we looking for?

  • 2 to 3 years of proven experience as a Sous Chef, or in a similar leadership role, within a luxury hospitality environment
  • Strong experience and technical knowledge in pan-Asian cuisine, ideally within gastronomic or fine-dining restaurants
  • Fluency in Portuguese and English, with strong verbal and written communication skills.In-depth knowledge of food safety, hygiene standards, and HACCP regulations
  • Demonstrated leadership abilities, with proven experience managing, mentoring, and developing multicultural kitchen teams
  • Strong organizational skills, high attention to detail, and a commitment to culinary and operational excellence
  • A proactive, hands-on, and solution-oriented mindset, well suited to a fast-paced, luxury lifestyle environment
